I had interviewed for an internship position at EY for technology consultant program for summer 2022 and got a call where they extended an offer. I wanted to know if I can defer the internship offer to fall 2022 or a later start date after summer.

Why would anyone advertise their poor integrity?
If you brought that up in an interview, any smart interviewer will assume you would do the same with any templates or make while working for them.
I would advise you to talk about your ability to make templates and models, not past artifacts you plan to bring with you.
That would tell me that they are an empty suit that isn't confident that they can replicate it
Your favorite XL and PPT are not institutionally valuable assets. Don’t bring it up. Everyone should be able to do XL and ppt.
Plus, anything you create at your firm is there’s.. this is theft and would be a red flag for me in the interview process.
Plus, (1) I’d be just as concerned you couldn’t recreate and (2) think you were arrogant that you believe we’re dying for your fantastic templates before you even understand our style, brand, approach
The only excel file I’ve taken with me was my workout and nutrition planning. Everything else was IP. Which explained the paycheck I was given every two weeks in return.
They’re actually the intellectual property of your firm. If you want to build stuff on your own dime and own time on a personal computer then it’s less shady.
Just tell them you can implement some data visualisation models that can improve their productivity ... Dont set yourself up for failure
I would then ask you to be able to not only re-create any template from scratch but also teach your fellow colleagues how to best incorporate best practices.
I would specifically not hire someone who was going to very openly put my company at risk by using and sharing stolen work product from their last employer. And who clearly would steal from my company upon exit.
OP, I’d take a look at your employment agreement or policy, it may not be worth the risk to take “your” work with you.
