With my bonus this year I’m splurging on a kitchen aid mixer and some really nice bedding.

But seriously, the coffee is great specially with the frothed milk. You can make it even fancier by getting the bougie flavored beans which I have reserved for when we file financial statements (Onyx Coffee Lab subscription!)

Depends on how much debt you have. For me, a decade ago, $500 would be a huge splurge because I had student loan debt to pay off. So if that's the range, buy yourself something you will enjoy for daily use.
WFH: Either a good standing desk or monitor for work from home, or an ergonomic chair (all assuming your employer won't buy you these).
In office work: upgrade your wardrobe with a really nice pair of shoes or two, or a nice blazer tailored to you, or some expensive high quality pants that make you feel you look good (or a laptop bag/backpack/purse/etc). Something you would enjoy and use a lot.
Outside of work:
A bike, kayak, stationary bike (not peleton level), orange theory fitness classes, whatever workout membership, a rock climbing membership, etc-something to keep you active
WHATEVER YOU WANT, but don't waste money. Experiences are generally better than things but as a young professional you probably need a few things
Go on a nice vacation. Even if it’s solo.

No offense, it was just a speculation based on you being a Staff 1 and maxing out your 401k. Contributing $19,500 for Staff 1 is a lot of money when you consider rent, electricity, food, student loans, etc. to still have so much money afterwards you need ideas on what to “splurge” on.
