If you want an exceptional experience, try either Hidden Omakase or Uchi's Omakase experience, Oheya. As others have suggested Uchi and Uchiko are also exceptionally good.
But for less frills, I also thoroughly enjoy Ume and Kata Robatta. Though KR has a twinge of a aloofness which is totally lost on me given they're barely in the top 5 these days.
Uchi is great but I think falls in the “expensive for the sake of being expensive” category. Soma (on Washington/Shepherd) uses the same fish supplier as Uchi — same quality fish, half the price. Very popular with the Rockets players on Saturday night too (they use a private room upstairs).
I’d go Handies Douzo. Never had a bad experience there.

Uchi and Uchiko. Kata Robata is a close second. All are expensive but totally justified by the quality.

I like Ushi Jin at the corner of Memorial and Sairy Ashford. It is very much like good places in Tokyo that i frequented while working in Japan.

Uchi is amazing but definitely pricey.
Nobu is also good but even more pricey than Uchi and not as creative IMO.
Aiko is my favorite personally. It’s very similar to uchi with a better atmosphere and approximately half the price
