I do this with everything. No food gets wasted! But soups and frittatas are the ones I use for leftovers and leftover veggies most often.
We do the same but call it “rice with stuff in it”.
Frequently the last meal before shopping day.
I should really be better with this! I tend to do rice bowls, not necessarily bibimbap, but like burrito bowls, or stir fry bowls, mediterranean bowls, etc. I am trying to get closer to zero waste, but it's definitely not easy as a single person!
Requires some planning, but I think it is. It also helps make me more creative.
Fried rice, or jacked up Nissin Raoh Tonkatsu ramen.
After Thanksgiving I love making sandwiches the following day, I think I look forward to both dinner and the leftover sandwiches equally. I get ciabatta with some mayo, turkey, stuffing, cranberry and a little bit of gravy! I know it sounds like an overload of carbs and dressings but it is so delicious!
Sourdough or marble rye, lettuce, and Miracle Whip, otherwise the same. Maybe a slice of American or Swiss cheese.
