Which teams/areas in tech should you avoid if you don't want to get stuck?

E.g., in consulting, you may want to avoid risk advisory, gov/pubsec and ERP implementation because pay isn't great and it is hard to switch to interesting and better paid teams like strategy later. What are the parallels in tech?
