Because in the old days you would meet people through school, work, friends, group activities, events, etc. so the pool of options was more people with similar interests or educations or personalities. With online dating you have to sift through the entire pool of options to find one of the few people you might really click with. Coupled with people thinking of everyone as disposable because of the many alternative options available to them (at least in their mind).
