No, but assuming the you are allowed to do so my concerns would be the cost of moving the wires/pipes in those walls and also the potential for an awkward layout unless you rework almost everything.
Why not just buy a house in a non-townhome community?

Because I’m engaging in a hypothetical discussion about this one possible scenario…

Townhome HOA very often have stringent rules, even specific ones that say you cannot do exactly that.
Most of the time they're constructed with a fire wall in between (at least where I am) which means cinder block, not just wood & drywall. That'd be a huge pain and I would imagine resale would be difficult in the future. If one townhouse is too small I'd look elsewhere.

My in-laws did this in a high-rise condo. They ended up with a beautiful unit with windows on 3 sides of the building.

I would not do on a townhome. Condo in the city/beach is different. Townhomes would be difficult to merge the plat on and could violate your mortgage agreement.
