Do New Business roles pay higher than traditional account roles?

I got my offer last year to join in Sept this year. Recently, I was made aware by people in the firm that there is an increase in salary across the board including my role. I recently had an initial interview for a technical recruiter position. The guy on the phone stated that this is not a 9-5 job and long hours are expected. I proceed to ask how much PTO is offered and he said that is not recommend within the first 6 months of working and the harder you work the more PTO you receive. How would you handle not getting a lunch break when you are a salaried employee treating patients for 40 hours a week? I don’t get documentation time either, but all notes are to be completed the same day.
