OP, keep in mind that some dishonest people would probably give them the same story to get 6 months of work in before quitting.
You might not be able to work for the period between CPT expiry and EAD approval.
You should definitely let them know but don't think it will impact your chances negatively since you don't need their sponsorship. However, it's important to tell them to coordinate your start date. Even when you mary an American, there's a process to getting the green card. You can get an EAD to work in the meantime, but even that takes 3+ mos to process. I was in this position and had to push back my start date several times because my EAD ended up taking 5 mos.
If you have current authorization to work, and do not need future auth, then there's no issue. However, if that changes and they do need to file for you they can fire you instead. EY files H1-B's but not if they were lied to about need.

They'll be ok - explain and the offer will be dependent upon having work authorization.... only hurdle you may have is if they want you to start sooner

I'm not dishonest, I'm in EY, which files h1b, why would I leave? Lol. ##also, is there a signing bonus for exp hires? How much?
Again, I am currently on CPT. Only my employer will change on cpt. So I'm not sure how this would impact my start date

Why would this prove to be a problem from a recruiting process? If you don't need work sponsorship, your CPT is not expiring soon, and it won't have any impact on your start date, what are you worried about? Our inferences about why it MIGHT be a problem are valid, otherwise this is a stupid question.
