Seat belts? Wow you guys are classy, we're still using duct tape. At least I moved up from basic gray to blue. Made my mama proud. In any event, hoping the seat belts are some kind of joke, but in today's world, who knows?
Legal or not, you should leave and find an employer who respects their employees.

Of course it’s legal because it’s voluntary in the sense that you are an at-will employee so you choose to work there. Now if you had some type of disability on record (that’s covered under ADA) that would prevent you from participating somehow and they terminated you because of it then you may have a case.

This is very normal in call centers and yes it is completely legal, if you feel you have to go to the bathroom a lot due to medical just tell the manager or HR you need to use the restroom more frequently most cases they don’t care. It’s to target the individuals who like to play TikTok on the toilet and lose track of time then 30minutes later you return to work.
Any place that is going to try and monitor professionals as they would preschoolers (which would be questionable as well) isn't somewhere you want to work.
You could turn it in to OSHA. A lot of people don't realize that OSHA has rules for office folks as well.
Shouldn't the leadership be more concerned about the revenue an employee brings in than the time they spend at their desks?
Even tracking the amount of work an employee completes is a better indicator of productivity than a useless seatbelt. This seatbelt idea seems Orwellian.
The seatbelt would not accurately represent productivity if an employee is sitting in the chair playing on their cell phone.
