We moved with two Siamese. Mine also hate the carrier and they will meow in the car. Prob not much to be done for that. You can put a blanket over the sides of the carrier so they can’t see the movement of the car. That may help them. But make sure to leave the front of the carrier exposed so they get air. At the new place, put them in one room with the door closed until they get used to it. Put the carrier in the new room with the carrier door open and let them come out and explore on their own. They will be okay!

How far is the move?
When I brought mine, I set up the bathroom for them with food, water and litterboxes. I let them explore and then had the doors barred during moving. The drive was only half an hour and I had an overlap between the apartment and house, so they got two nights in the house before I moved in properly.
One of my boys hates dogs and the previous homeowners had dogs, so I went around cleaning whatever he growled at.

If you can get some calming aids from the vet for travel. Just did a long move with my two boys. They did meow for about 10 minutes then settled after a while. When we got to new place I let them hide under blankets/bathroom until they got comfortable in new space. Took about 4 days for them to normalize.
Make sure when you get there to give them a “safe space” with some of your clothes / blankets from your old home
Setup a small space for them in a room or bathroom in the new home so they can adjust slowly and don’t just find somewhere to hide. If it’s close enough to take them there early so you’re not trying to move the cats at the same time as the movers are moving your stuff.
We just moved with a cat. Definitely recommend the carrier at all times, it’s safer for you and for them. Your vet can absolutely prescribe a few pills to help relax them during the car ride if needed. We did that but didn’t end up using them. Kitty meowed for about 10-20 minutes and then stopped.
Don’t worry about litter box if it’s a one day trip. Kitty will be too stressed to drink or pee. As long as you have a litter bow, food, and water at your destination, you’ll be fine.

I moved cross country with my cat in December. My recommendation is 1. Get them used to the carrier. Put the carrier in your living room, office, etc.. get your cat used to it and 2. Have a blanket to cover the carrier in case your cat needs alone time. I didn’t use meds on her and she did great. Didn’t even have to request a room at the airport :)

Pheromones can help too. They have plugins. I did all the scary stuff (vacuuming, mopping) before I brought them over.
If you can, take some blankets, toys, beds, anything with their scent and your scent over to the new place ahead of time. Set up a room just for them. Then take your cat over and leave them in the room with all of those familiar things. This will help ease them into the new place. Also try Feliway plug ins.
