I can't speak to Matthews or MH, but Huntersville (or any surrounding town- Cornelius, Davidson, Mooresville) is a highly desirable area. Traffic can get annoying so consider your commute and whether you'll be stuck on 77 every day.
Matthews would be my pick. We live on the Matthews border with South Charlotte and there a ton of families and festivals to attend. The public schools are good but you are also close to many private schools if you go that route. A little but of a hike uptown but lots of people do it
I think both are solid choices. I live in South Charlotte, but we spend a lot of time in the Matthews area. There is a lot to do in that area for families.
I personally like Huntersville the best of the 3, Matthews and Mint Hill are close to each other but Matthews has a lot more going on. I’d say it depends on where your jobs are, if either of you will have jobs not in Uptown, they are likely closer to one or the other. Also if you are interested in being close to the lake, Huntersville is nice but if also can make homes more expensive so if you don’t care for that, Matthews would be better. There are nice parks and greenways, shopping, restaurants, and some family oriented activities in both areas.

I live right outside of Matthews in Indian Trail. We go to Matthews for most things though. It’s a nice area with lots of great places to and almost everything you can think of shopping wise as well.
Be aware that every October-November, Huntersville weekend traffic is awful. As in, add another hour to that localgrocery trip because it's practically a parking lot.
The Carolina Renaissance Festival is there, and a lot of new build homeowners apparently didn't properly research the area and caused significant fuss with the city. Which in turned caused pressure on the festival, and some changes were enforced. There's still some bitterness over it both ways, just don't be Those People about a massive tradition.
Ranked by desirability Huntersville>Matthew's > mint hill
And because of desirability they're also ranked by costs and traffic to city center (though Matthew's and minth hill are probably not too far apart in traffic) .
Is hard to say because people need to know what you value. mint hill schools are slightly less good than Matthew's but they share some and also depends what districts you move into. Where you're moving from? To me they're all too far. Are you going to be working in Charlotte?
Idk on Huntersville i think of birkdale village and other amenities, lake norman area (and even cornelius and davidson areas. My brother lives in Matthew's and my best friend in Huntersville. I will agree Huntersville feels more of it's own place while Matthew's is almost an extension of clt. My view at least
Thank you all for your insight! This is our first move out of state so lots of unknowns. Really appreciate all of the replies.
Huntersville! Lower crime rate, better schools, shopping and restaurant options. Just moved here myself (charlotte native who grew up in concord) and LOVE it. Being close to the lake is a plus also!
