Have you been working OT hours for the last two years and you haven’t spoken up about your pay??? This is on you to speak up about, most companies don’t auto add any OT. Also if you had an agreement about time off that is again, up to you to communicate with your manager and take those days off. They aren’t just going to tell you.
You should be getting paid for overtime, especially if it was mentioned in your contract. I'd contact HR about it and report the hours of overtime that you know you've worked, hopefully they will let you know how to report your hours from now on so that you aren't missing out on a ton of pay.

Same, I haven't had overtime pay since I worked at a grocery store in high school
W2 employees are given an offer of employment with an outline of salary and benefits, not a contract. If you’re a FT employee that is not exempt from OT, and you’re recording your time each week reflecting OT and they’re not paying you for it, that’s a labor law violation. Why would you wait 2 years to make a claim if it’s in writing? Regardless, if you’re documenting your time each week, how could this be missed for so long?
I do get paid overtime and its easy for me because it shows on my checks so if I don't get paid for it you bet I am bringing that up. I would not have waited this long to bring it up if you noticed you were never paid for it. But definitely go to HR or payroll and let them know sooner rather than later.

Depends on your job classification. Full time exempt == no overtime. Hourly non-exempt == overtime. 1099 or W-9 contract could have overtime pay depending on the terms of the contract r
