Maybe just say you’re under the weather. Nobody wants to risk catching anything during the holidays!
Why do you need a reason to decline? I’ve only attended two in the last six years. No one has ever asked me why I did not make it. Now if the office party is an event during typical business hours, then expectation would be that everyone participates, unless you are fully remote and not within commuting distance.
Just RSVP no. You shouldn’t feel obligated to give up your personal time for a work event.
Reasons my staff used -
No babysitter
Choir practice for big holiday performance
Dad's assisted living was having their Christmas shindig
Rising Star
Easy - you were exposed to COVID.
Or just show up for like 45 minutes to eat and then leave.

I always say I have a prior commitment. They don’t know that prior commitment is with my dog and on the couch watching tv.
I have plenty of things-prior commitment, not feeling well, family emergency. I haven’t attended a holiday party since 2018 and no intention to attend.
EY1- I attended the parties for 5 straight years and all were at different venues. everyone I attended wasn’t enjoyable in the slightest. And if I’m going to give up a Friday evening, it at least better be enjoyable.
I just said I had a doctor appointment
