It's steady work. Seldom fast paced or lots of fires. Depending on how big the clients are you may find yourself dabbling in corporate work. If someone is willing to hire you without (the often times, hand-in-hand) tax experience required take it.
My experience has been that it is frequently fast paced with lots of fires, so I think the answer is that it probably just depends on where and who you are!
Depends on what you’re looking for. In my experience I loved it. Manageable pace and work 1 on 1 with clients planning their estates. I can’t offer an opinion on filing for probate, etc., but estate planning is a lot of template work which is easy!
I have never worked in Family Law, but made the switch from PI to Trusts & Estates. I have never regretted it.. even for a second. I worked for a small Trust Lit & Estates firm for five years before recently transitioning to an in house position; the two positions are very different but overall I find the work to be rewarding and in my opinion less stressful than other areas of law. I hear from recruiters that it can be a niche area for Paralegals and the pay in my area for T&E Paralegals definitely reflects that. I think that it would be somewhat of an easy transition from Family Law and you may find you are happier!
Curious - What type of in house position?
Are you asking about estate planning (pre death) or estate administration (after death)? I started in the former, currently doing the latter, and I love it. I found the planning work a bit boring but enjoyed the client interactions. The administration work is never boring (to me), and the client interactions can be tough since you are working with people who are grieving. Happy to share more if you comment which side you are interested in.

Thanks for all of your input. Great to have other perspectives. Family/matrimonial is definitely fast paced, but there’s barely any remote positions available which is what I’m looking for and this position is mostly remote.
