This is 100% a time to call an attorney
Someone like this. Not actually recommending them, but an employment lawyer who deals with stock benefits. There have to be a ton of them in Cali with all the tech startups paying so much in stock.

Honestly sounds like a question for your lawyer.
Do I have any chance if I go to court to sue my current employer to pay me a proper severance package and vest my RSUs? I live in California if it matters.
A contract was signed. The new company has to honor the terms but is allowed to convert to their own shares based on aquisition ratio. So yes I would 1) not sign and 2) sue for breach if the money is worth it
Depends on the terms. The acquiring company could be acquiring the assets of your current company which means they can leave certain liabilities and obligations behind.

Repost this in the legal bowl for more useful insight - but get an attorney and see if they will take it on a percentage of win rather than hourly

Why do you feel you are owed your unvested RSUs? You haven’t worked for them
But they're willing to work for them per their contract. It's the new acquirer that is trying to break the contract.
