Imo, its too late. You had the interview phase and the chance before you signed an offer to ask questions. The interview phase is as much for you to learn about the company and see if its a fit for you. Once you sign, that's a signal you are good with how they operate and want to join the company...
It doesnt hurt to ask. You always have the option of leaving if you dont like the answers.
You have the answer. Make the best of it, do your best and keep your eyes open for another opportunity making sure never to take your rues off the job in front of you.
And it may not have mattered if you had asked more questions. Companies don't admit their negatives
