You didn’t explain how you ended up answering emails on weekends. Did they ask and you said yes? Based on the information provided, I fail to see how you ended up casually answering emails on the weekend without you yourself choosing to do so willingly.
I get emails on the weekend too, they get answered on Monday when I return. The people sending the email know to expect no response on the weekend because I have an out-of-office response.
Also when you accept a job, you sign an agreement of some kind that lists job duties and work hours/availability. What did you sign?

I don’t even OOO for weekends. That’s just understood.
There are a couple times a year when I am available but that’s planned and expected. EOQ, EOY.
Have you been asked to reply to emails on the weekend or to monitor your email on the weekends?
Just because someone sends an email late on Friday or over the weekend, doesn't mean that you need to respond to it before Monday.
I don't log into my work laptop on the weekends, and nobody has ever asked why I didn't respond to an email over the weekend. I can't count on one hand how many Saturdays I have worked over the last 13 years. And each time we were asked at least a few days in advance.
My question is why do any of you have access to company email at home? I have the ability to agree to access company emails on my personal phone but I will not give them permission to access certain data on my phone. Forget it.
There are companies that will issue laptops to employees and it has the primary company software loaded onto it. And depending on your role within the company, they will also issue a company cell phone.
Has your company issued laptops to employees? Mine does.

The weekend aspect has a solution: Don't login on the weekend. Remove work email and chat from your phone.
Why are you replying to emails on a weekend? It just sets the expectation that you'll always be on. Unless you have a role where something critical is likely to happen over the weekend, there's no need to reply until Monday morning.
have you ever heard of contract law? well when you fill out an application that is a contract with the company and if they said no weekends go to court

I assume you're not from the US, because there is no such thing as a "contract with the company" in the job application.
When I'm off of work, I'm OFF OF WORK. Only a select few have my number and if they happen to be working on a Saturday and they have a question that I could answer, then they might message me.
Go to human resources and show them the ad and and tell them you took this job because you cannot work on weekends. If they do not concede tell them you will have to take it up with the labor board for false advertisement. You now have been damaged as well.

I took you post mostly in jest, but please don't do any of this complain to HR type of things. Just put an automatic out of office response on Friday on your email saying when you will respond. Just remember to take it off, or program it. If something is an emergency, someone will let you know.

There are several different solutions: 1. Log your time that you work on weekends. Take the time off during the week. Your manager will quickly question why. Tell them you are reclaiming your time. 2. Look for a new job. 3. Do not respond.

Are you going to answer the many questions as to why you're replying to emails on weekends? DID someone ask you to, or, instruct you to?
I’ve never seen a job described as “weekdays only”. Usually it says normally working hours are M-F 9-5 which are really 2 different things unless you are having to work full days on the weekends
I asked if the systems were archaic and they said no. Now I find out that they are. So frustrating.
If it's overtime maybe otherwise sorry I'm out of town
