If my company finds out I'm applying/interviewing elsewhere, would they let me go right away?

(1/2) Hi all, based in the UK 🇬🇧, would appreciate your advice on how I could break into product management.

Context: Graduated in 2019 (Finance), 2 years at EY as a business consultant on mix of pmo projects and tech projects where I was developer (data vis, power platform, sql, vba, data analysis etc.). Joined Google on a 6 month contract as a data analyst.

Should I be applying for product analyst roles? Should I apply for strategy consulting? Could I go straight for prod mgmt roles?

Should all the on-site interviews have a feedback of "hire/ strong hire" in order to proceed to HC?
What if one of rounds was not up to the mark?

What are some red flags you've noticed in the hiring process? I've finally landed an interview after weeks of applying. I think it went well on my end, but something about the managers I spoke with just feels...off.

Just got turned down for a job I really wanted. No interview. I even had a referral, but they didn't even look at my book! Feeling empty and worthless right now. Wondering what people think about my situation. I’ve been offered a role with a company. The job description didn’t mention college degree as a requirement. On my CV I have a section listed as “Education” and under it I have “Business Studies” with the university name and the 3 years that I attended the course (2.5 to be exact). It’s a 4 year degree and under this I have my High School equivalent with the years I attended there. The education wasn’t mentioned in the interviews. Continued below.

Have an offer that’s doubling my TC (think a few hundreds less than a 1m). On the flip side, I have quite a good relationship with my current boss; I have shared the offer with him and I’m shocked he wants to match it. Does it make sense to stay? These are the points I’m considering:

I am a 2022 MBA graduate working at Deloitte as a consultant. I am a part of their internal strategy team (non client facing role). I have a prior workex as a software developer and I am looking to make a move to Product Management.
