Giving two weeks notice is the standard. What often happens, though, is that companies will tell you to leave as soon as you give notice. Usually they'll pay you for the two weeks, but they don't want you hanging around for various reasons. So your best bet is to just give two weeks notice and hope they show you to the door.
It's really not a requirement, legal or otherwise. I would still try to muster up a week if you can. Honestly the only downside of leaving without notice is if anyone ever contacts them directly, they can badmouth you. it's better not to give them the opportunity and leave in peace.
The two-week notice is standard practice, but it isn't a legal requirement. It's generally been done as a courtesy by the employee, to not just disappear overnight but to work the last two weeks to finish up projects, clean up the office, and in some cases the new employee will be brought in to work with the departing employee for his/her last few days. You CAN give one weeks' notice and legally leave the job after a week. Your current employer might not be impressed at your quick departure but there's nothing they can do to stop you. As for burning bridges, you're leaving that job so why would you worry about burning bridges with them?
Is there an actual employment law that states you must give a 2 week notice? Not a standard BUT an actual law. If not, then a week it is. Giving a 2 week notice in a toxic environment could lead to events that could have a not so good outcome. When asked on your next job interview “why did you leave” just answer “I ran out of therapy sessions”.
“I ran out of therapy sessions.” I love it. There is no state or federal law (US) that requires employees to give a 2 week notice.
Most companies have people that we can call when we start having major problems and if you feel like you are in a dangerous or your patients are an unsafe environment you should call them . Cover your tracks. Give them a legitimate reason and have it documented.

2 weeks is the standard but I usually have lots of leave to take so whenever I have needed to leave i just use my annual leave to cover the notice period as much as possible

Giving two is the standard, but if you have to give 1, just do it.
