Not sure what's the dilemma here. Prioritize what you want and go for it.
OP. Take the interview. IF (and that's a big big If) you go through all the interviews successfully and get the offer - you can decide if you want to accept or decline.
Who gives a crap about you switching in a month. Easily justifiable: I got offered my dream job, the other wasn't a good fit so I quit! Alternate option, say you took time off for a month and don't even list it on your profile. Month gap is too small to matter, it starts becoming a problem if it's more than say 6 months (too long to even justify it with "took time to travel") Last point, gap will only matter when you switch next after FB, which could be 2 years or 10, you can't predict the future and you can't plan for all exceptions. It's the exception scenarios actually (like the one you are in) that have the greatest potential for change in trajectory.
The dilemma is that - I just started a new gig and if I get this offer from Facebook then it means I'd have to quit this new job after only a month. How would that look for both parties? Plus, I'll do I bring it up in my subsequent interviews with Facebook that I'm only a few weeks in at a new job / role??

Agree with DD1. I've had friends In similar positions take another offer after 2-4 weeks. It's not that uncommon. Good luck OP!

So I can give some insight - I left consulting to go industry and didn't really enjoy the new company I worked for. Couldn't see myself there long term for several reasons, and wanted a quick exit. I had two options:
1) interview hard at other places and say I've left consulting and am having some "time out" whilst I interview and land my next gig. Don't mention my current new job at all
Or
2) mention that I have a new role and tell the truth that I didn't enjoy the company I worked for and couldn't see myself there long term and give them the legitimate reasons. They could see from my CV that I had done a good stint in consulting so I probably wouldn't be bouncing around for the sake of it, and that it was just a fit problem at my current job.
I went for the second option and landed 3 offers after telling the truth. I was grilled quite a bit in the interviews but I was able to back up my answers and again - they were legitimate and not bullshit
No long term consequence at all. Given that it's one month there's no reason you need to even have it on your resume, so it'll never come up again (you just can never get a job at your current company again).
Agree with BC1. I'd say the max gap you can have in your CV is 3 months, any more than that I think you require a reference

OP, given your situation I'd stay quiet about current job And go with the flow. Do highlight to them that you've left your previous job and are job hunting at the minute / taking time out. Otherwise the other option would be to tell HR right now that you've started new job, send an updated CV to them and justify to them why you're looking to move already. They may even decide to not interview on that basis, if you don't manage to justify or give good reasons on why you're looking to move so soon
