There's not a card that's best for everyone. I would assess your spending habits and then check out a card offering the best return for you.
Also, consider applying for a new card outright to take advantage of the signup bonus. Then, you can make a choice to downgrade to a different card so as not to lose the credit age. (I don't believe that signup bonuses are offered for downgrades.)
Amex changed the rules - you are no longer eligible for the Gold card signup bonus if you already have/had a Platinum at some point, so OP should just open a Green card, then cancel the Platinum.
Answer here depends entirely on your spending habits.

You won’t get the sub for the gold card, but I’ve found it pays for itself entirely.
4x restaurants
4x grocery
120/year grubhub credit (10-month and I use for takeout I’m already doing)
135/ Uber credits (also use for takeout I’m already doing)
Essentially makes the card annual fee $5. 4x on groceries is easy to maximize for me.
Transparently, I’m more active in Amex ecosystem currently vs chase
I love my Chase Sapphire reserve. It’s $250 a year after the travel credits, plus a points accrual machine
OP - Agreed. The CSR is such a smooth experience. I use it for travel, dining, and purchases in need of a warranty. Points redemptions are simple.
Amex is become an obstacle course of coupons and credits. It's not worth the mental energy to keep track of the litany of restrictive credits anymore.
I agree the coupon book is a lot to keep up with and is more limiting compared to the Sapphire reserve or venture x. It’s the reason why I’m no longer interested in the platinum. It causes more stress than enjoyment. I was wondering if I should downgrade and to what card with an AMEX or if I should just cancel. I do have a lot of travel expenses. I pay for myself and my parents, who travel internationally frequently. At least 4 international trips per year.
