How does a senior's word count for more than the manager's?

I started hunting two weeks ago and I am currently awaiting a few offers. Just don't want to be suckered into taking an offer because I'm unemployed.

Honestly. This is in the back of my mind, I'm starting to look for work right now.
Senior and my career advisor have worked on several jobs together so they are pretty buddy buddy.
Sometimes if you're laid off your old employer will vouch that you are still employed with them until a certain date. If you were fired... Well that's a different story. You don't have to tell them you are laid off... You can say you left to reevaluate your career /path.

I was laid off in mid sized firm. I feel like interviews are going to be so much tougher now once they find out I was laid off :(
How would they find out?
When doing a background check, they will find out my start date and end date. They will not find out any reason I am not employed anymore. But they will find out I am not employed. 1) I think this will hurt any negotiating power I thought I once had. 2) I feel like they will see the unemployment as a red flag.
I asked HR and they said they can't say I'm still employed with them. Wouldn't it raise red flags to say I left without having another job lined up? I'm thinking of just being honest and saying I was laid off due to cutting costs and outsourcing. What do you think?
