At minimum, aim for what you would have wanted if there was no unlimited PTO. I try to get at least 20 days minimum. The trick is to plan and book them ahead of time as much as you can.
I feel like 3 weeks is pretty standard ?
At my agency we have an unlimited PTO policy as well with a minimum of 10 days that we need to take each year. I usually take around 20-30. No one has told me that that was too much.
