Its overheating because your thermal paste is toast. If you are handy, you can order a tool kit and thermal past and replace it & clean our the fans/laptop with compressed air.
If OP is asking about air vs pro then I don’t think they’re handy with computers/special level of frustration that comes from opening a Mac

I have the air and got one of the higher storage/RAM options and have no issues. I use photoshop and tableau often

If you're into sticking with OS X and the Apple ecosystem, then yes, an Air will cover those needs. I use one from 2012, and while it's showing its age, it still stands up. I also happened to get one from 2015, and it's noticably better. A 2020 model will be more than fine.
It does a little, but no one said we need to update the OS when a new one comes out. I have an 8GB RAM upgrade in the 2012 and the 2015. Makes a world of difference. I wouldn't have been able to keep them going with the stock 4GB models.

I used to be a huge Mac person, but if you spend the 2k you would spend on a new pro on a PC you could get an absolute MONSTER of a machine.

So replacing a laptop - very debatable. Depends on what you’re looking to use it for. Even my 2018 gets too hot.. so not sure if allure of Mac or being in ecosystem cuts it. But to each their own

I got a refurbished 2017 MacBook Air from apple last year for cheap(ish). It handles everything seamlessly and has yet to over heat or glitch. I constantly run different applications simultaneously without issue. This is my third Mac since 2007. My last one was a 2013 MacBook Pro but I needed faster processing for work. Yes—there are good non-apple laptops, but if you’re like me, it’s hard to switch once you’ve become accustomed to macs or so untwined with apple products. So, I’d recommend a refurbished one if you’re looking for a less expensive option.
If you can manage the very minor weight savings I would spend the extra money and get the pro for the performance. Maybe look into refurbished options too
If you’re going to spend that kind of money, get the Pro. It will last you much longer and performs far better than the air.
