It's helpful to have 2-3 projects and what you did in them. Results. Metrics. Your contribution. Then you'll remember something from each role when you're going onto your interviews
I utilized LinkedIn to apply to jobs. Also, make notes on my phone which I later paste onto my resume.
I’ve also in the past used sticky notes on my laptop screen (strategically placed with reducing the video screen) so that relevant projects are at the forefront.

But past work experience - go back and find the evidence you used for appraisals. Collate all of that together and then consolidate into relevant points
Job hunt at night. Keep your resume up to date and in front of you when your interviewing so you can refer to it. Look up Behavioral based interview questions and write out some answers so that you'll remember the stories.

Write out a script in bullet points detailing each project.
I was working like a maniac when I got my job. Had to sacrifice late nights and weekends to get it done. Also took a few random days off for prep and had a lot of “doctor’s appointments” during my interview time. There’s no easy way unfortunately.
