Or go to HR and piss off your boss (which results in the same).
Or just take off the two days and hope no one will notice since your boss will also be gone.
This is tough because you want to be respectful but you also want to celebrate your one year anni. You deserve to take your PTO when you want it. Do you work solo or on a team? Is there someone you can ask to keep an eye on the workload over these days? I hate calling out sick but you gotta do what you wanna do! 🫶🏽
Depends on your job and how vital it is that one of you are there. Also depends when is it (in one month or in like one year)

PTO is always flexible as it's part of your compensation and YOU decide when you use it.
"Unlimited" PTO is a scam.

How is she able to deny your PTO? It's time that you earned. I agree with what other people are saying with you calling in a sick day
If this is only her opinion and not company policy then you should go over her to HR so that you can enjoy our anniversary. You should be able to use your PTO whenever you want
negotiate with the others with PTO or should have been better.
Don't request time-off, simply inform the employer that you will be taking the following days off.
Jobs don’t care about you. Do what you need to do to get the outcome you want. If that is taking a sick day, so be it. If they had to lay you off, they won’t be thinking about your anniversary, PTO, or commitment to the company. Your request is not unreasonable. However, you boss’s preference/expectation is unreasonable. Look out for you!
