What did you concentrate on during your program?
I would suggest starting with a sole practitioner or boutique to mid-sized firm that would be willing to train you. Then after some time you can make a move. Unfortunately this may require a pay cut or less than you were expecting but it has paid off for myself. Keep your chin up. Breaking in is the hardest part no one tells you about!
Also join local paralegal networking groups to network and continue to learn.
Make sure the internship is very hands on!! That’s how I got most of my experience. I changed careers I my late 30s and I got a ton of hands on experience and they even let me stay on until I got a full time job. I also worked part time for one of my professors who was a single practitioner. Also great experience!! And great for the resume when the time comes to get a job with more responsibility and pressure
