Traditionally western-style food? I’ll experiment/ use the techniques I know work. Something I’m less familiar with cooking, like Indian or Vietnamese? I’ll follow a recipe.
Usually follow but depends how forgiving the recipe is and on what. Is a cup of chopped onions vs one big one gonna make a difference?
I will usually follow the recipe but then do a little experimenting with the spices at the end. I do stick to the recipe when baking!

First couple times I follow. Then I’ll modify. By the 5th time I’ve cooked something I’ll usually have my way of cooking said dish
Depends on what it is. If its from allrecipes or the like I’m probably tripling the herbs and spices.
Half the stuff there was written by midwesterners who are allergic to flavor
I stay as close as I can then just go wild on attempts 2 through infinity…

I like to use the recipe as a base but I love to deviate and do my own thing.
Something completely new? Yes, I follow recipe exactly. When I do it again, I tend to adjust if needed.
The first time, I follow the recipe but may adjust seasoning to taste at the end. By the second time around, I get creative and make it my own.
Experiment. I will look up 3-5 recipes for the same new thing and then do what resonates.

I like to take this approach as well
If it's similar to something I've cooked before, and I'm familiar with all of the principles in play, I might adjust it. But for the most part I don't mess with it until I know how it turns out as written. It's not really an experiment if you only have one data point!
Sometimes I'm more looking for inspiration than for a recipe -- in those cases I may lift the flavors from a recipe I find and apply it to a base recipe I'm already familiar with, but then that's sort of the same thing as above.
It's always frustrating to see reviews on recipes like "I just eyeballed everything instead of measuring and it came out terrible, 1 star" or "this didn't work for me, btw I substituted every major ingredient, that's not a problem right?"

My go-tos are:
1: grilling: Mallmann (I could chug his chimichurri recipe)
2: game: John Besh, Griffith’s “Afield”, Ebert’s “the field to table cookbook”
3: Texmex: Fain’s “homesick texan” (I’m a Texan, so this has to be in the mix somewhere)
4: Israeli: ottolenghi
5: Indian: iyer’s “660 curries” (looking for better recs here)
6: vegetables: cooks illustrated “science of good cooking” and “vegetables”
If I find it online, I check the comments for tips and tricks. If there’s a theme to the comments (like use more garlic or chocolate chips😆) I might prepare to make that adjustment. Otherwise I like to try it as written the first few times and then adjust if needed if I continue making the recipe.
Follow the first time unless I detect a flaw like too little salt or something (taste & adjust).
