As the commenter above said, I’m somewhat confused as to what it is you’re dealing with. Job hunting can take a long time. You found a firm you’re interested in but you’re not the exact candidate they wanted. That happens to all of us. You just keep looking until you find the right match.

I'm guessing they're looking at you as if you're a flight risk. They're worried you'll be either bored or unhappy and will jump ship as soon as another opportunity comes along.
What’s their concern? Having to pay you more? If so, would you accept a pay cut for a chance to learn the new practice area?

Hiring someone who is significantly overqualified can create a bunch of problems, chief among them that the employee isn’t happy with a role that’s vastly diminished from the one he or she is used to. This applicant may also lack skills that never developed due to remote work. Or the fit might not have been good. As Attorney 1 said, OP need to do what we all do after having a setback — look forward and keep going.
