Going to an office to meet the team and see the office after being offered a position. After much thought I think it is best to stay at my current position for now. How do I go about declining an offer/ask for a day to think about it?

I find all so often you need to tell the client what they want to hear to keep their business and I feel like so much of the what I recommend doesn't actually get implemented. FAANG offer is slightly higher (though both are a 50+% bump on my current comp). Both would have me reset to entry level. Which one should I take?
