I think you need to adjust your mindset from “I’m losing progress” to “I deserve to enjoy vacation.” It takes a month of not working out at all to start to lose muscle so being gone for a week is going to be just fine. No need to track but you can still choose to prioritize lean protein and include veggies / fruits. Enjoy a drink at dinner but maybe don’t day drink too. If you have dessert at dinner then don’t be chowing down on cookies during the day. You don’t need to restrict but you can also choose a moderate approach and just stop when you feel satiated instead of full. Take walks, bike or hike - you can still be active without lifting.
