How much would I have to spend for Amex business gold to be worth it?

I got a very good offer in EY. The joining date is tentatively targeted for July 2021.
Due to covid there is a prediction that priority dates for indian nationals Eb2/EB3 might move rapidly in the month of Sep 2021 (Oct 2021 visa bulletin)
So basically if I delay the offer for couple more months, I know whether I would be eligible for filing I485 with my current company as my PD is May 2016.
How to request EY to hold the offer for 2-3 months? If we say the real reason will they accept?

Anyone has recently applied for Canada visitors visa ? I applied on March 29 , completed application along with Biometric but there is not update on portal. Application says in progress still. I heard usually it takes 15 days but mine has already passed . Anyone has gone though the same recently ?
