I follow this account on IG and the person is always making a garlic confit and spreading it on bread. Seems like a good way to use a lot of garlic! I don’t know if it’s ok to share the account but she makes a ton of things using garlic @daenskitchen
Ooh, that sounds good! I always have some bread on hand, and that seems way more convenient than garlic bread.
Pro
Just roast the whole heads (slice off the top and drizzle with olive oil) and it becomes creamy, buttery and rich. Use on bread, vegetables, etc. Our make Greek garlic sauce.
I do this for the large heads, but I have a lot of small heads (San Francisco is not an ideal garlic growing climate) and I've found it a bit tough to roast them.
Can always blend and make cubes for later use. Very helpful

Omg there’s this roasted chicken recipe by Alison Roman that’s always a hit if you wanna host a dinner party. Do a full roasted chicken stuffed with fresh oregano, rub it down with fennel seeds salt and pepper and olive oil.
Place into roasted pan and take two bulbs of garlic and cut it crosswise, lengthwise about a pound and a half of tomatoes, drizzle olive oil over it all and place around the chicken with some additional oregano.
Roast in the oven at 325 for about 2.5-3 hours. When done remove the chicken, splash some red wine vinegar into the roasting pan with the jammy tomatoes garlic and juices. The garlic will be softened and you basically carve the chicken back into the roasting pan and spoon the soft garlic, jammy tomatoes, and chicken onto some crunchy toast and eat it like that.
10/10 hit.
You can also make ina gartens meatloaf with a garlic butter sauce, it requires you to poach like ten or 15 cloves of garlic for the sauce. SO GOOD.
Honestly find some people in your life who like to cook and gift them garlic. It’s such a small gesture but it’s something i would love to receive!!! Nothing better than home grown garlic :)

I put garlic in everything I can. It's one of my favorites! I just added a good amount of fresh minced garlic to some beef chili I was cooking, and I thought it turned out awesome.
