Congratulations on the new job! There is no predicting timing... you could start trying for a family and find that it takes you a year or more to actually conceive (hopefully not!), or you could start trying and get pregnant right away and you'd be almost a year into your job when you go on mat leave. Both aren't the worst situations for your job!
Employers deal with this all the time, it's a reality of life. If there's some threshold to be at the company for a year before securing mat leave benefits, then just wait to start 3m after.
Finally, freezing your eggs is totally an option but it requires a lot of appointments and hormone fluctuations too so not necessarily the "easy" way out in case you're looking to be in peak performance as you start your new role.

Your eggs will never get younger (and younger us always better). Get started on prenatal and healthy eating. Read “It Starts with the Egg” or visit their website for well-researched recommendations on prenatal supplements.
Get on waiting list for a reproductive endocrinologist (do local research to find best clinics, talk to your Obgyn if you need a referral). Many RE have several months of waiting lists.
It’s no regrets (except maybe the appointment cost, if insurance doesn’t cover) to start towards freezing your eggs. You can always stop if you decide tine isn’t right.
