Work in getting an offer. Go to the second interview. Between final team/manager interviews and getting an offer HR recruiter usually touches base with you. Express enthusiasm about the role and the company, but mention your only holdback is that you’re expecting a bonus of $x on y date. Convey that it isn’t a deal breaker for you, but it’s a consideration. If they really want you maybe they can find a way to work that amount into it or be flexible on the start date
"I told my managers that I was moving on. They understood but asked if there was any way for me to finish out a big project, as they cannot replace my particular skill set so quickly. While I am ready to leave, I do not want to put my teammates in such a hard spot. Would it be possible for me to start (x) weeks later? "
Say you had a prescheduled vacation/family event you're committed to
Tell the new company. Ask for more money.
also - how large is this bonus ? how long will you have to be at the end job to make up the loss of the bonus (i.e a $10K bonus and the new job pays $20K more - takes 6 months to make it up)
Just tell them you need to wait for your bonus.

how much time are we talking here ? can you drag it out for a few weeks (especially at this time of year).

Whoaaaa you can’t give that up! I had someone tell me they wanted to wait for their bonus once...said person was moving from and AE to SAE so I wasn’t offering a signing bonus. I let it go, but it left a bad taste in my mouth due to the approach, so just be careful how you phrase it.
