I don't think it matters. This isn't the 1950s anymore. People, customers included, are used to seeing tattoos. If it was a face tattoo or something offensive, I'd draw the line, otherwise, not a big deal.
Depends on the restaurant. That being said, it’s not fair to say back of house can do something the front of house cannot.

Ive got 4 tats, one being a stripper on a dance pole on my arm.
I worked in a fancy restaurant and my ex boss told me it was controversial.. and i was to hide from the guests. which i disagreed with and found insulting.
So i upped the ante,
The next day i wore my fbi: female body inspector t shirt, SLEEVELESS!
Dude almost had a brain aneurysm when he found out i had been standing welcoming in his guests at the front door all night.
He fired me on the spot. I left feeling proud i stood up for my fellow tattoo people and got straight to work finding my next tattoo friendly boss.
You’d have to make a compelling argument as to why visible tattoos aren’t professional.
if they’re not offensive tattoos why does it matter?
