Was laid off in April and just got an offer for 25% more than i was making but for a role that I am not too excited about. Times are tough and i do need to get income. How bad is it to accept but continue with the rounds of interviews I started for roles I am more excited about?

Im current at EY in a consulting group that does not focus on deals, but have completed few due diligence type engagements. We focus mostly on ODD (Operational Due Diligence) for private equity firms. I really want to make it into IB. I have an interview for a Valuation and Opinions Role. Would that help in transitioning in as an IB Analyst? I would have a substantial pay cut (100K to 85K - excluding bonus). My current experience has not been seen as valuable by recruiters.
