I think as long as you take a very careful and slow approach to introducing them, you can have a very happy cat home with several cats. if you are thinking kitten and you have two adults, I'd suggest 2 kittens - they'll play together and not bug the adult cats as much. I've done a lot in animal rescue and have advised countless people on how to grow their rescue cat family. Look at Jackson Galaxy videos, he's great!
No advice on 3 cats but as a parent of 2 cats who do not get along, I can say that you never know how their relationships will work out. You might get a third that fits in perfectly, that fights non-stop, or is somewhere in between. So if you are expecting a very specific dynamic and are not sure you’ll be able to deal with all possible scenarios, I’d consider staying at 2. I also thought our second cat would be added fun for everyone (including our first cat) but now I realize I just wanted another cat. Our first was happy with the status quo.
