Just get a chemex and a good manual grinder (if it has to be electric, the Baratza Encore is regarded as the best entry-level electric grinder). With this combination, you will match the quality of some coffee machines that are 3x as expensive.
In terms of beans, you're probably looking at coffee typically from South/Central America (Costa Rica, El Salvador, Colombia). George Howell, Counter Culture, Verve, Onyx, Coava, Heart Roasters, Stumptown are some of the best and have a variety of beans.
If you haven't tried African coffee yet though you don't know what you're missing out on :).
Highly recommend the Chemex! it works so well with lighter roasted beans due to its thicker filters. However, I would go with a 5-cup Chemex or above - people experienced some issues with the 3-cup because of its narrow spout.
I usually do 25g of coffee with a 1:16 or 1:17 ratio with water just of boil. My starting point is always 205F and i'll adjust from there depending on the beans. If underextracted i'll slightly increase the water temperature and/or grind finer and if over extracted the other way around. Beauty of the Chemex is that you can easily brew more/less depending on how much coffee you want.
I highly recommend finding a local coffee shop to get freshly roasted beans from rather than grocery stores or the coffee shops that all use the same beans (like I feel bamboozled every time I walk into a “local” shop who just uses Illy or Counter Culture or whatever....). You want to actually see a roast date on it, & the more recent the better. Makes all the difference.
I found a local shop in Williamsburg VA that roasts their own beans and I have been ordering from them for a year now. They roast Tuesdays and ship on Thursday; I get it by Sunday. It’s a game changer! (Name is Aromas). Every time I try some other beans to try to support some shop nearer to me, I am disappointed....
Agree. I prefer going to the local shop and getting it from there. Or I hit up the local farmers market but try aren't stocking up these days due to covid. Have supply chain issues

Capresso for me too! Appreciate the grind settings and consistent performance. My roommates and I brew coffee differently and it’s been great for all of us.

Pour over if you want to be fancy; else any Cuisinart coffee maker with the “bold” setting makes an amazing cup.

I live in the Bay Area and you're right, there is great coffee here! I get Oakland Coffee because it's delicious and the bag is compostable. I go through a lot of bags of coffee beans and grind my own. My coffee machine just died too so I hope other commenters have some good grind & brew machine recs.
