Research, discovery stuff (including doc review), first level drafting of some pieces of motions depending on circumstance. Depends on the cases you’re on and where they are in their lifecycle.
If we went to trial a junior on the team would sure as hell get dragged in with us, but the probability of going to trial when you also happen to be a junior on a case team is low, simply because of the frequency of trials.
Research (and drafting memos of said research), responding to discovery, helping prep for depositions by putting together witness files of key documents/drafting outlines, document review (or managing document review attorneys), drafting small pieces of briefs and/or cite checking briefs, and keeping team on top of upcoming deadlines. These are just some of the things.
More volume in that the cases are likely larger, but in my experience big law associates work on fewer cases at a time.
I do a lot of drafting and responding to discovery, drafting discovery motions, drafting demurrers and motions to dismiss, and random research and doc review. Am a second year at an Amlaw 200.

Second this. Some juniors do substantive drafting. I drafted large portions of appellate briefs, full MTDs and to compel, and other discovery papers in my first and second years. Also second chaired an expert depo.
Of course, there was also a bunch of research memos, doc review, etc..
Second year at a v20. Draft motions (including dispositive motions) and briefs, draft discovery requests and responses, argue minor pretrial evidentiary issues and/or motions in limine, take a direct exam in a pro bono case, prepare fact and expert witnesses at trial, prepare direct exam outlines and cross outlines, prepare the substance of trial slides and other demonstratives, oversee contract attorneys and/or a doc review firm and keep overall doc review process running, write letters to opposing counsel on discovery issues, outline or support drafting of expert reports, take or defend less important depositions, lead meet and confer on discovery issues, prepare argument outlines for oral arguments, research the law for potential claims/defences/other arguments, do second- or third-round doc review (e.g., hot doc review or quality control on contract attorney’s privilege and responsiveness decisions), and of course do menial tasks like proposing redactions for motions filed under seal, keeping the task list up-to-date, making sure people have binders of items that they’d like.
It would be unusual not to be doing these things at my firm!
