Assuming that it’s three days off adjacent to a weekend (and also not a holiday weekend), probably in the 200-300 range. I’m in a unique position, though, and regularly come in to 50-100 new e-mails on Monday mornings. Many are responses to one e-mail chain, but I still have to at least skim all of them to see if there’s anything important.
100s but I return to a few handful.
When I'm OOO, I turn on the automation to trash everything except those with name pings, email on main contact, and those marked urgent.
Even better if there's already replies to those chains, knowing someone else has been holding the fort.
I also turn the automation on when it's peak business, ain't got time to deal with it.
Usually around 80-100, but generally only 30 or so need action, and the rest I just file away.

Depends on time of the month but I’d expect 15-25 with at least 10 of them being junk I just delete.

Your away message can really help limit those emails. I went out on maternity leave and I was so worried about how to deal with this. I made sure that not only I directed people to the right person but I also noted that all emails I received during that time would not be reviewed. It’s all to common that even when you have an away message where you point people to another team member, they will still email you and let you get to it when you’re back. Not cool to do that so tell them you won’t be reviewing anything received during your time away 😊

Well I get between 20-40 emails a day. So 3 days would be 60-120.

Your company realizes your true worth when you’re away.. so I would say around 100..
Number varies based my client at the time. However, whatever the number, I sort the unread by subject and read the newest 1 or 2 to determine if I need to take any action. All the others get marked as read and filed away.

The last three-day I took was like 40 ish but was in January where we are definitely slower.
