I live in LA and just got back from a few nights near Yosemite. I rented an Airbb. Took cloths wipes, gloves, masks, stopped at whole foods to get food and stayed in the Abb the whole time except for two walks. It was so restorative to have a change of scenery and sit on the deck reading a book and listening to the wind rustle the pines.
Def go for it, just take the proper precautions

Parks and beaches should be opening relatively soon. Hopefully.

A lot of the state park campgrounds are still closed as well as the national parks. You can hike in some parks but need to wear a mask. I know in Malibu, police are ticketing anyone parked along PCH because the beaches are still closed.

I live next to Shannendoah NP and there are giant cement blocks at the entrance and exit.
Your idea sounds awesome but plan out where to go that is open.
Most beaches in Northern California closed to parking for now as well as most pullouts along sections of highway 1. Some towns are ticketing for all non-local residents so research before you go. Parked in town and hiked into one beach last weekend, which is permitted. It was a 9 mi RT with 2000’ elevation change and the entrance was blocked by locals taking pictures of anyone driving by in a car and displaying ‘Go Home’ signs
