I have accepted Infosys Offer Letter . If I am not joining Infy and joins another company, then is there anything like Infosys remembers it and will not consider in its Future Opportunities saying "You previously Didnt join our Organisation after accepting Offer Letter , So we are not considering your profile ahead " (Something like blacklist).
Has anybody accepted Infy Offer Letter and Have not joined ...and later got another Offer from Infy after say 6 months or 1 year and then Joined Infy ?

Rewrite your resume to talk about the type of work you did (business process analysis) and don’t mention the specific SAP products you are familiar with. That will help get you in front of the right interviewers for roles that aren’t just SAP implementation.
I was in a similar situation at Deloitte. SAP consultant for 2 years and wanted to move to strategy. The way I did it was to take an internal strategy project and build up my network there, since Deloitte’s SAP practice makes it difficult to network out raise your Offering (I had myself added to the Strategy mailing list only for them to remove me a couple months later). I was able to make the switch, but it was not easy and a lot of luck was involved.
If applying to other jobs, do not mention SAP, stress the strategic part of your role, client relationship building, and reframe the project as a digital transformation.

If you really want to get out go to business school and get your MBA to rebrand yourself.
There's no such thing as stuck forever, that's dumb. The most direct path may be to lateral into an SAP SI consulting position then move out of that. It's not forever but making the transition may take a couple steps.
Not MD1 but SI to me, as a fellow SAP consultant, means system integrator.
I’m know the feeling. SAP practice is damn near like joining a cult at Deloitte. I honestly didn’t know any better out of college. I’m taking cloud certs to help transition out. I don’t list my SAP certs on my resume.
I’m in B4 implementing SAP and I’d like to eventually work in the mothership 😂

Yeah.... how long have you been in your role? You might be "stuck" in SAP implementation, which is a pretty in demand area as companies are forced to upgrade to S/4 in the next few years. Do you have other experiences outside of SAP?
Only 2 years. Nope nothing else. I’ve been here since I graduated
Minimize the usage of the word SAP as much as possible. Call it a system or ERP. Highlight the transferable skills that you gained. I've been in SAP since 2 years as well. Interviewing with FAANG these days with such a resume.
Have you considered changing industries? Maybe to Workday?
I’ve applied to Salesforce and Microsoft but no luck 🙃
