Bring tablets, phones, anything electronic and entertaining, backup batteries, about 3x snacks as you think you’ll need, and enough diapers/wipes/changes of kid clothes in case you’re stuck without your luggage for 12-24 hours (assuming you check luggage). Might also want pillow and blanket for each kid, jackets, stuffed animals, bandaids.

Puzzles, crafts, legos and switch everything out every couple of hours, even if you think the tablet will work for 4. It keeps the mind alert.
Get a buckle toy or a Swiss cheese threading game for the 1 year old. Bring a LOT of snacks and nappies (assuming the 1 year old isn't potty trained). If you want to use screens, please bring headphones.
(We did London to Melbourne this year with a 10 month old, and earlier this year did London to SFO and London to Vancouver).

We did exact same flight w a 5yr old. Went fine. Followed a lot of the above advice. Plus he loved playing poker on the plane’s game system for hours (doubt the other passengers knew they were losing to a 5yr old!).
Also, we fly A LOT and best thing we ever did was make sure our kids knew it’s not allowed to get out of their seat. Nothing more annoying for you and other passengers then a squirmy kid crawling on seats and the dirty floor. And w kids used to being buckled into car seats it wasn’t hard for them to believe that was just the plane’s rule.
Also, when our kids were under 5 they loved playing w stickers on flights (who knew they’d be such a hit).
Play-doh, bubble games on an iPad, snacks for everyone, a light blanket to shield eyes from screens on the red eye, and patience

I just flew IAH to AMS and IAH to TLV and back with my 2yrs old. I had some flash cards, a couple of small books, a variety of his favorite snacks and a lot of downloaded videos he loved (Netflix and YouTube)...I also walked the hallways and hanged out on the back of the plane.
Honestly my kid did fine on long flights but I agree Pack something to make them sleep in case of emergency
