TLDR : Was interviewing at Google and another place lets say X. Received offer from X but google pushed final round to Jan 22. How would google perceive my candidacy if I end up in X during the final rounds
Details -
1. Company X is a good one but G is my first priority. The process for G began earlier but has been dragging on.. Not sure if I can hold on for X's offer for a month from now
2. Not concerned much about burning bridges with X but just about Google's perception
They don’t care.
Also you would have to hold company Xs offer for close to two months.. your final rounds may be Jan 22 but it’ll take 2-4 more weeks minimum to get feedback, HC review, and offer stage. Realistically you’re looking at mid to end of Feb if you get to Google offer stage.

Have you told your Google recruiter that you have an offer on the table. Maybe they can move things up
This all is just HR speak. There is nothing like that happening. They might have reached their 2021 goals and are looking to use you to get their 2022 goals. I have seen this happening with another candidate who wants to join my team.
I’m sort of in the same situation for something else; except that I was forced to take offer from a company that wasn’t from my most favored company that I recently interviewed for last week. I’m still trying to buy myself time before my actual start date to hear back from the organization I recently interviewed with, but the insight is helpful.
The latest update that I received from the recruiter of the company I last interviewed with, mentioned that they hope by this upcoming week they’ll have an update from the hiring manager of next steps. I hope that the next step would just bypass the 2nd interview stage and it just be an offer. In the event I do have to go through additional interviews and then get an offer by the time I start the job where the offer was already accepted, I’ll just tell them that I received an offer that matched closer to my salary expectation and will see if they’ll be willing for match it. If not, then I’ll have to just put in my two week notice.
