Not to be flip, but you leave when you have a new gig.
Personally, if I can’t make at least two resume worthy things per year it’s time to move on. It’s harder to find a new job when your best work isn’t recent.

When there's no real incentive anymore. Incentives include pay, title, creative opportunity (making cool stuff), or experience. These can vary depending on where you are in your career. But if most or none of these seem realistic anymore it's time to start looking.
If you’re along yourself this question then it’s time to leave.
I have to agree with this. Anytime I start thinking that it might be time to leave, that is my sign that it is time to leave.
