This seems to be common in companies that are not product led and data driven at the core. You as a product designer should ask questions and push back (professionally) about working on project “requests” that dont have solid reasoning or data to back them up. Ultimately, this can happen and does happen in even the most product-centric companies due to various external factors, so you should remind yourself that documenting that process in your portfolio is as valuable as having shipped projects (when it comes to showing experience). Its all in how you are able to pivot and adjust to your situation, because the bootcamp idea of UX is a fantasy compared to the reality most software faces.
Long story short: use your storytelling skills to show how you did your job in your given environment, and what you learned from the resources and limitations you were given. If you are looking to join a team that truly values your problem solving skills, they will look at how you worked, not at how your company managed its priorities and resources. I hope this helps!

First, what you’re experiencing isn’t uncommon.
Most organizations DON’T have mature design organizations.
And even MAANG is the equivalent of a swan: everything looks graceful above water, but it’s a shitstorm underneath.
So, you have to increase the volume and emphasize the parts of your story that matter most and decrease the volume of the parts that don’t.
What’s important is focusing on the “I” statements for your project.
What did YOU do.
Those live products? Ultimately, the hiring manager is going to have to ask what YOU contributed to it.
I certainly know that you didn’t code the product, so you’re part of a larger team.
And I’m interviewing YOU to see if YOU will be a great team player on MY team.
So, show me the end-to-end case study of your work. Do what you can to pull metrics for business impact, but I’ll understand if you weren’t able to get that data.
If you have an idea of impact from tests or hear say, make up a number.
If you don’t have any clue, show the end result and compare it with how it aligns with early personas, research, or before/after images.
You can still frame the picture well even if the project was canceled.
Cry all the way to the bank, and keep the work for your portfolio.
As a hiring manager, I know companies are dysfunctional.
And a hiring manager asking for live products is LAZY.
They’re disqualifying talent for environmental reasons rather than individual merit.
