I kind of got overwhelmed. My takeaways were traditional boards are:
3-5 cheeses comprising:
Hard cheese
Soft cheese
Spreadable cheese
Meats:
Just grab a variety pack from somewhere.
Can't ever really go wrong with nuts and some crackers.
Then a lot about styling.
The types of cheese that fills that void rabbit hole is where I'm at. I've always just gotten pre-made ones. But i figured I could go to the butcher and do better possibly.
Hard cheese - my favorites are :
Manchego
Parmeggiano / Grana Padano
Cheddar
Soft cheese :
Brie
Camembert
Gorgonzola (if you like blue cheese)
Then you can add dried fruit like dates, apricots, dried raisins, dried figs, walnuts, almonds etc.
You can add tomato / fig / onion chutney
You can also add fresh fruit - grapes and pears
Crackers or bread is a must
Manchego is my favorite 😍
Make sure you spend more than $12 on wine. 🤣🔪

Advice from a charcuterie board expert (aka me) No question go to Whole Foods, their cheese is 1000% better quality plus they have accoutrements right there. Gotta have multiple types of crackers, several types of meats, fresh fruit (go berries), honey comb is a lavish touch, definitely need a nice Brie, fig preserves are always good, fancy dark chocolate broken into small pieces, definitely nice wine. Oh and of course you must use a real wooden board.
They used to let you try any cheese you wanted too. Not sure if that’s still a thing with COVID (prob not).

Are you talking wine pairing? Find a good wine shop that also does cheese and meats (if you want meat too). Main thing for pairing cheese is that sweet-ish whites have a much wider array of pairings. So maybe an off-dry Riesling or Chenin Blanc could be a diverse wine pairing.
If not, then for food the concept is either like with like or creating balance. You want to play with a diversity of acid, sweet, fruity, and texture. I’d skip the chocolate covered almonds and make that a final, final snack. Maybe get some Marcona almonds instead.

Or just go to a fancy grocers stores cheese counter and ask for three cheeses for a charcuterie board. For meats maybe a prosciutto, bresoloa, salami. Then some nuts, dried fruit (apricots), fig jam. Bread, water crackers, and those hard wafer like crackers whose name escapees me.

On the off chance you live in the U.K. there’s a cheese called Black Bomber which is incredible, if you don’t/can’t get this then tbh any extra mature cheddar will do for your hard cheese. A blue cheese or a goats cheese is often nice on a cheese board. Someone has already mentioned a soft/spreadable cheese and then don’t forget some kind of chutney, a balsamic caramelised onion usually goes down well. Throw in some grapes and then you’re there!

I made a board last week with Trader Joe’s goodies: sliced cheddar, honey goat cheese, cracker thins, prosciutto, fig and olive crisps, pepper jelly, sliced pears, chocolate covered pretzels, mini stroop waffle cookies.

YouTube Pinterest and Reddit are your friends. You don’t have to copy exactly, just steal ideas/foods you and your wife life and stuff the board full. The effort and purpose to do it for your wife will mean more than what’s actually on the board
We get a decent smoked cheddar and a nice baked Brie (with garlic and EVOO). We also get some Bonne Maman intense strawberry jam to offset the smoke (just throw it on there)
Go hard cheese and soft cheese. Brie is a good soft cheese, gouda a nice hard cheese.
Your best bet is to go to an actual cheese store, tell them how many people you’re having, and ask them to give you a mix. Ask them what cheese they are enjoying or excited about right now.
Also, a nice trick: get a log of goat cheese, put honey and green herbs (rosemary, thyme, basil) on it.
My favorites for this sort of thing:
Goat cheese w/honey
White, English or farmstead cheddar
Smoked Gouda
White rind pungent cheese or a buttery brie
Parmesan or manchego
Marinated mozzarella
Dried apricots
Raspberries
Grapes
Tart cherries
Marcona almonds - best if a little oily
Green olives
Crackers of different sorts: cracked pepper water crackers, wheat, rosemary. I love the raisin/rosemary and other varieties of crostini from TJ's.
