It’s been a hot minute. Thai Basil Chicken Lettuce Wraps with Hoisin Sauce (Keto). My pre-covid work clothes are now loose on me. I’ll have to buy a new work wardrobe wherever that may be. I quit my job and am back in school. Goodbye tax, goodbye busy seasons, goodbye billable hours.. 😁

I have an interview with Korn Ferry for an associate principal role and am curious about others’ experiences have been with work-life balance here. I have $20k in savings, I owe $6,000 to my 401k loan, that’s the only loan I got. I am debt free otherwise except for my house. Should I use my savings to pay off? Is it normal for people to ask for a raise when more responsibility/task fall under them? My company is going through separation and unfortunately my team is the one getting separated, I have to take on responsibility of another 3 people and continue to deliver the same after separation… how will you start this conversation with your manager ? Maybe it's because I'm in tax, but I've never dealt with these unreasonable Partners people speak of. I've never been told I can't go on vacation, or I've never been yelled at for not being in the office long enough. I've also never been iced out because of one mistake here or there.

During my first year, I struggled, and the partners I worked with went out of their way to take their time with me to help me learn, as did some of the senior-level Associates.

How does your firm measure utilization? I work for a small boutique that defines it as utilization = number of billable hours/2,080 and full bonus payout occurs at 80% plus.

My pie day pie (belated!) Ina Garten’s chocolate banana cream recipe. My first time ever making a pudding. I have to say it was amazing to go from muttering “oh shit” for a solid 20 minutes of mixing the eggs/milk too aggressively into a foam and finally seeing it condense into pudding. Deffo recommend trying it!

My parents are visiting this week and mom and I made dinner tonight. Salmon is seasoned with Trader Joe’s ajika (a Georgian spice blend) and we just roasted the broccoli. The standout is the mejadara. It’s spiced rice and lentils with fried onions and is popular throughout the Middle East. We used the recipe from Yotam Ottolenghi and Sami Tamimi’s cookbook, Jerusalem.

Cavatappi in Roasted Red Pepper Cream Sauce

Tired of of the same old boring tomato marinara sauce? Try a roasted red pepper cream sauce!

Red bell peppers are roasted in the oven until sweet. It is then blended with caramelized onions, garlic, red pepper flakes, sun dried tomato paste, and cream into a silky, smooth and velvety sauce. Finish the sauce with a knob of butter and coat your pasta. Cavatappi works well here. Don’t forget to shave a little Pecorino Romano
